Pouring heavy cream over cinnamon buns before baking adds texture and moistness to the bread. When the cinnamon buns are baked, cream is mixed with cinnamon and sugar to create a caramel-like sauce that coats the buns and gives the fluffy buns a creamy texture.
You can't tell me that this won't make your mouth water. You can use this trick with canned cinnamon rolls, frozen cinnamon rolls, or homemade cinnamon rolls. In this post I will teach you how to make them yourself. However, if you want to use pre-made cinnamon rolls, just skip the instructions until you get to the part where we put them in the pan - then there you go!

Ingredients for Homemade TikTok Cinnamon Rolls
- raw milk– We use a mixture of milk and water as the liquid for this bread dough. Milk makes it excellently filling. We also scald the milk before use, so the taste of the bread is very delicate.
- butter-The butter should be cold, straight from the fridge. I use salted butter.
- dry yeast, active yeast
- Warm water- We will use warm water to activate the yeast. The temperature should be around 105°F.

- flour- There is only multipurpose flour in these breads. I specifically designed this recipe to have a very soft texture while also using all-purpose flour so you don't have to buy a bag of bread flour right away.
Cinnamon bun filling
- melted butter- Brush the dough with melted butter before adding brown sugar and cinnamon. I find that if there is too much butter, the cinnamon and sugar will melt off the bread and make a mess.
- Brown sugar– Some people use granulated sugar, but I prefer the taste and texture that brown sugar gives to bread.
- Cinnamon
- whip cream- This is where magic happens. You will need 1/2-3/4 cup heavy cream.
Icing of pastries with cinnamon
- butter- I use salted butter again. If you only have unsalted butter, add a pinch of salt to the glaze. You want your butter to soften.
- powdered sugar
- whip cream– Room temperature is best! If it's straight from the fridge, consider putting it in the microwave for about 15 seconds so it doesn't cool down.
- vanilla extract

How to make homemade cinnamon rolls with cream
How to make cinnamon roll dough
- The first thing you should do is heat the milk in the microwave so that the batter will brown the milk. It usually takes about 1-2 minutes for the milk to steam.
- After the milk is steamed, add a piece of cold butter to the boiled milk. Let the butter melt in the milk. Butter helps the milk reach room temperature faster.
- While the butter is melting in the milk, let the yeast rise. Ferment the yeast by adding warm water (about 45°C), yeast and a teaspoon of sugar to the bowl of the cooker. Stir, then let the yeast sit and start bubbling. The yeast should rise and foam in about 5 minutes.
- Once the milk is no longer hot, add the melted butter and milk to the risen yeast (about 115°C).
- Put half the flour in a bowl with sugar and salt.
- Use the dough hook to turn the mixer on low.
- Add the eggs to the blender one at a time.
- Finally, add the last half of the flour, a cup at a time, until everything is combined. Knead for 5 minutes. The dough will be soft and sticky! You will feel your fingers stick to the dough when you tap it, but it should come away cleanly.
- Cover the dough and let it rise in a warm place for 1 hour.
How to fill and roll cinnamon rolls
- Flour the work surface, then turn the dough onto the work surface.
- Sprinkle the upper part of the dough with flour, then gently roll the dough into a rectangle with a rolling pin.
- Spread the melted butter over the dough, leaving a strip of butter free about 1 cm wide on top.
- Then sprinkle brown sugar over the dough and spread it evenly with your hands.
- Sprinkle cinnamon over brown sugar.
- Level the cinnamon and sugar with a rolling pin.
- Cut the dough into strips about 5 cm wide with a pizza cutter.
- Roll each cinnamon roll and place in a 9x13 pan sprayed with non-stick coating.
- Repeat cutting and rolling the cinnamon rings and adding 12 of them to the pan.

Pour the cream over the cinnamon buns
- First, heat the cream in the microwave to encourage the yeast in the bread dough to warm and rise.
- Slowly pour the cream over each cinnamon roll until all the rolls are soaked in the cream and the bottom of the pan is covered.
- Cover with plastic wrap and let the bread rise for another 30 minutes.
Bake TikTok Cinnamon Rolls
- Bake at 375° for 15-20 minutes. The cinnamon rolls will rise and the cream will foam and then evaporate as the cinnamon rolls bake.
- The cinnamon rolls are ready when the internal temperature is around 175-190°F. The cinnamon rolls will be toasted on top.
Glazing cinnamon rolls
- I like to glaze my cinnamon rolls while they are baking so they are ready to glaze after baking!
- First, beat the butter until smooth, then slowly add the remaining ingredients, alternating between 1 cup of powdered sugar and a little liquid, and beat on low speed until the mixture is smooth and creamy.
- Glaze the cinnamon rolls while they are warm.

Heat the milk in the microwave until it boils. (Usually about 1-2 minutes.)
Put cubes of cold butter in the hot milk. Let the butter melt, then stir. Cool to near room temperature.
Mix warm water, yeast and 1/2 teaspoon of sugar. Let the yeast activate while the milk cools. The yeast will become very bubbly, which means the yeast is still alive.
Pour the room temperature milk and yeast mixture into the bowl of the multipurpose mixer.
Add 3 cups of flour and mix briefly.
Add the remaining 1/4 cup sugar, salt and eggs. Mix until well combined.
Add 3 more cups of flour and slowly mix until combined. Slowly add the last cup of flour. This dough will be sticky.
Cover with plastic wrap and let the dough rise for 1 hour or until doubled in size.
Turn the dough onto a floured surface and gently roll it into a large rectangle. Measures approximately 12" x 24".
Brush the dough with melted butter, then sprinkle with brown sugar and cinnamon. Be sure to leave a strip of one centimeter at the top. This way, the rolls are closed so that they do not fall off during baking.

Using a pizza cutter, cut the dough into twelve 2-inch strips. Roll each strip and place in a greased 9×13 pan.
Heat the cream in the microwave for 30-45 seconds. Slowly pour cinnamon over each circle.
Cover the tray with plastic wrap and let the cinnamon rolls rise for another 30 minutes.
For the second rise of the bread, preheat the oven to 375°F.
Bake at 375° for 15-20 minutes or until golden brown.
For the vanilla buttercream frosting, cream butter. Place the powdered sugar, milk and vanilla in a mixer and mix on medium to high speed for 3 minutes.
Alternately add remaining frosting ingredients, 1 cup powdered sugar, then a little liquid, until all ingredients are added. Slowly add the liquid until you reach the desired consistency.
Beat on low speed until smooth and creamy.
Freeze some warm cinnamon buns and enjoy!
